            Update build options, without actually changing anything

The man option has been replaced by the man-pages option, which uses
auto and therefore does not need to be manually enabled (because we use
-Dauto_features=enabled).

The gtk_doc option has been replaced by the documentation option, which
still needs to be manually enabled.
